Lazy Meal Prep

Soooo.... it's Tuesday night, almost halfway through the week already and I am just getting around to my meal prep for the week. The BF and I had such a great weekend celebrating my 23rd birthday at Whitetail Ski Resort and the Mercersberg Inn. Zach really knocked it out of the park. And then of course Sunday night was the Super Bowl (Go Pats!). I got home at 11:30 pm on Sunday and not a single chore had been done. No groceries, no cleaning.

I spent a lot of time last week compiling a ton of clean eating recipes. I'm talkin' soups, quinoa bowls, vegan muffins, chia bowls, the works. So at 9pm on Monday I was looking through my recipes so I could go to the grocery store and get some ingredients. But one recipe needed a food processor (which I don't have), and another had a whole separate dressing recipe with 12 ingredients. I just wanted something easy.

I made up my own lazy quinoa bowl for the week.

I love, love, love roasted cauliflower. I paired my cauliflower with some butternut squash. Now my suggestion is to google how to cut a butternut squash before attempting to do so. And use a really sharp knife. I'm pretty sure in my attempt to chop it all up, I wasted about half of it and got a right bicep work out. Anyway, I tossed the veggies in some olive oil and some crazy salt, and threw them in the oven.

I also prepped some thin chicken breasts (thin so that they cook faster) with Italian seasoning that I bought at the farmers market. I threw that in the oven with the veggies.

While I waited for the veggies to cook I boiled some quinoa and threw in a little spinach at the end because I always like to have a green.

Once everything was cooked and cooled I assembled my "bowls". For extra flavor you can season with some salt and pepper, or red chili flakes. And today I ate my bowl with avocado because avocado goes well with everything.

This meal is super easy, nutritious and tasty. I also packed an apple, a granola bar and some nut and dried fruit trail mix.

Hopefully next week I'll be on top of my game and prepare something a little bit more exciting, but if your looking for something easy and quick this is a great go-to.
